Le Moutai est à l'origine du vin chinois à la sauce Daqu et est connu comme le «vin national». Il présente les caractéristiques suivantes: couleur transparente, parfum de sauce prédominant, parfum de moelleux, élégance et finesse, bouche douce et lisse, clair et rafraîchissant, durable et corsé, arrière-goût prolongé et parfum durable dans des tasses vides. Les gens appellent le parfum unique du Moutai «le parfum Moutai», qui est un style typique du parfum de sauce chinoise. Le Moutai est pur, transparent et moelleux et se compose de trois saveurs spéciales: sauce, fond de cave et douceur moelleuse. Il existe plus de 300 composants d'arôme connus. Environnement d'origine


Le Moutai est nommé pour sa production dans la ville de Moutai, située sur la rivière Chishui à Zunyi. L'usine est construite sur le cours supérieur de la rivière Chishui avec une bonne qualité d'eau, une dureté faible, des oligo-éléments abondants et aucune pollution. Le vin obtenu par distillation avec une eau aussi douce et non dissoute est particulièrement doux. Par conséquent, les poètes de la dynastie Qing ont autrefois loué la rivière Chishui avec les poèmes «il rassemble des sources spirituelles en un, l'eau de Huixiu descend vers l'est». La ville de Moutai possède également un environnement naturel et des conditions climatiques très particuliers. Il est situé dans le bassin du point le plus bas du plateau du Guizhou, à seulement 440 mètres d'altitude,à l'écart du flux d'air du plateau, et les nuages sont denses toute la journée. Ce climat particulier, la qualité de l'eau et les conditions du sol sont très favorables pour la fermentation et la maturation du vin. Si les conditions climatiques spéciales y sont laissées, certains composants de l'arôme du vin ne peuvent plus être produits et le goût du vin sera déficient.
